Though I am travelling across Quebec and Ontario with the Ankarsrum and KoMos this week I did have an opportunity to do a bit of baking. Thanks to a wonderful niece for spending the evening baking with me. Here is our finished project a delicious batch of Brown Bread.
Accessories: Stainless Bowl, roller/scraper
Also Ankarsrum or KoMo Mill and Flaker if using fresh flour and steel cut oats.
Yield: 3 to 4 loaves
- 4 1/2 cups warm water
- 1 cup molasses
- 1/2 cup honey
- 2 tbsp. shortening or oil
- 1 tsp. salt
- 2 cups steel cut oats
- 12 cups flour
- 3 tbsp. instant yeast
Soak oatmeal in 2 cups of the water for 30 minutes. Place water in Stainless bowl, add molasses and honey, salt and shortening and mix well on low speed.
Add 1/3 of the flour and soaked oats. Blend low and then add yeast and continue to mix slowly adding the remaining flour as needed. May not need all the flour or slightly more dependant on the moisture of wheat used. Pinch the dough if just moist but no longer sticky you’ve got it. Turn timer to 8 minutes with roller about an inch from the wall and speed at about 3 o’clock. Let rise till double in bulk put in pans and let rise 1 hour. Bake at 350 degrees for 40 minutes.
