It could not get easier than throwing everything into the blender and having muffin batter ready for the pan in a few minutes. With the new Ankarsrum Blender it was fun too. These are quite healthy (if you cut back on the choc chips or add raisins instead) plus this is Gluten Free. Great little snack to tide you over till Dinner.
Equipment: Ankarsrum Mixer with Blender attachment
Servings: 36 mini muffins
Preheat oven to 350 degrees
Ingredients:
- 2 cups rolled oats
- 2 tsp baking powder
- 2 eggs
- 2 bananas
- 1/2 cup yogurt
- 2 tbsp coconut oil
- 1 tbsp honey
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup chocolate chips
Place oats in blender and grind with dial at about 6 o'clock speed for about 20 seconds till fine. Stop the blender and add the rest of the ingredients except the chocolate chips and mix till everything looks moist. Turn the blender down low and open the top cap, DO NOT TAKE OFF THE LID and slowly pour in the chips. Once last chips have been added stop the blender and you are done. So easy, spoon the mixer into mini muffin tins 3/4 full. Bake for about 10 minutes, they won't brown that much as very little sugar. I often turn on my broiler or torch them a bit to brown whenever baking low sugar. Store in airtight container for a few days or freeze.
