Great for your morning toast. I wanted to make a bread that was healthy and filling for my morning toast. This did the trick, I made these loaves a bit smaller than most bread so they would fit nicely in the toaster.
Accessories: Ankarsrum Roller/scraper combination and KoMo Grain Mill
Quantity: 3 small or 2 large loaves
Oven temp: 375 degrees
Ingredients:
- 6 1/2 – 7 cups flour ground, sift half
- 2 1/2 cups warm Water
- 1 1/2 Tbsp. instant Yeast
- 1/2 cup Honey
- 1/4 cup Oil
- 2 Tbsp. Molasses
- 2 Tsp. Salt
- 1/4 cup Wheat germ
- 12 Tbsp. Wheat Gluten
- 1/2 cup Cornmeal
- 3/4 cup Sunflower Seeds
- 1/4 cup ground Flax
- 1/2 cup raisins or dried berries (optional)
Method:
Grind the grain and sift approx. half, saving the bran/germ removed for another recipe.
Add warm water, oil, honey and molasses and salt to mixer. Blend well add the unsifted flour and the yeast to this and blend thoroughly. Cover and let stand for about an hour to create a sponge. Add the remaining ingredients 0ther than flour and raisins or fruit to the sponge blending in slowly blend. Now blend in about 1/2 of the sifted flour and raisins or fruit and continue mixing slowly adding flour until you have a nice soft dough that will still stick just slightly to the hands. Knead for 8 minutes at about 4 o’clock on the dial. Cover and allow to rest and rise till double in bulk. Punch down, allow to rise again for 5 minutes and divide into loaves. Cover and allow loaves to rise another 45 minutes or till double in side. Bake in preheated 375 degree oven for 40 minutes or till browned and tapping bottom of pan sounds hollow. Remove from pan and cool on wire rack.
